Xanthan gum is a polysaccharide that is naturally produced by the Xanthomonas campestris bacteria. The primary structure of gum xanthan is composed of five recurrent saccharide groups, each of which has two glucose groups, two manosa groups, and one glucuronic acid group, with a molar ratio of 2.8: 2.0: 2.0. Xanthan gum is commonly used in industry as a thickener.
In the food industry, xanthan gum is widely used as a thickener. Aside from being a thickener, gum xanthan is also used as a stabilizer, emulsion maker, adhesive material, and to prevent the formation of ice crystals.
In addition to the food industry, xanthan gum is also used in the paint, oil, pharmaceutical, toothpaste, cosmetics, paper and textile industries. In these industries, gum xanthan is also widely used as a thickener to regulate mixed viscosity. In the medical field, gum xanthan is used to reduce cholesterol levels in the blood and can be consumed as a laxative agent.
